Smoked Tiki Rum

Jungle Bird

Ingredients

  • 1 1/2 ounces blackstrap rum

  • 3/4 ounce Campari

  • 1 1/2 ounces smoked pineapple juice

  • 1/2 ounce lime juice, freshly squeezed (preferred but these bottled juices are pretty good)

  • 1/2 ounce simple syrup

  •  Garnish: pineapple and cherry and fronds

Recipe

  1. Add pineapple juice to a lidded mason jar

  2. Place the Skull & Cinder smoker over the jar, add your chosen wood chips and allow the smoke to fill the jar. Slowly remove the smoker and put the lid on the smoky jar and set aside.

  3. Add the rum, Campari, lime juice, and simple syrup into a shaker with crushed ice, finish by adding the smoky pineapple juice and shake until well-chilled.

  4. Pour ungated (don’t strain if using crushed ice) into a rocks glass.

  5. Garnish with a pineapple wedge.

    • Alternatively, place the pineapple wedge into the mason jar and smoke the wedges before placing on top of the drink.
